Egmore and Beach stations belonged to the South Indian Railway company while the Central station belonged to the Madras railway company. So, to differentiate, they might have used different abbreviations for the name 'Madras'.
Or it is possible that the 'A' in MAS referred to it being on the Arakkonam/Arcot main line. But I think the former reason is probably the actual one
